Cooking Edition: We need to talk about this oatmeal, you guys

So, again, sorry for my lack of posting.  To say I have nothing much to write about is an understatement.  But what I do need to talk about is this oatmeal that has been unleashed upon my office, nay, my heart.

A2 has been bringing in this delicious oatmeal for breakfast for the last ... while now.  Weeks? Months? I have no idea, but it smelled SO GOOD.  Cinnamon and yumminess, every morning.  My regular of cottage cheese and a hard boiled egg was getting a little played out (though omg, salt and pepper on a hard boiled egg? I could go on eating that forever), so I decided that I needed to have this oatmeal for myself.  Luckily, it's a recipe from the internet!  Check it out here, friends - Alicia Silverstone's "Quick Date-Apple-Cinnamon Oatmeal."  Click on that link, make a grocery list, and prepare to have your life changed.

Here are my mods (with enormous thanks to A2 for suggesting them):

  • Like, half that amount of rolled oats, unless you're really hungry.  A whole cup of rolled oats is a lot.
  • On that note, I keep everything else the same, because I like my oatmeal sweet.
  • I just do a whole half apple, because I'm typically preparing this for two, and why not just use the half and not have to put an apple third back into the fridge?
  • Lots o' cinnamon.
  • Not a mod, but my friend Deb's maple syrup!  So delicious every morning!
  • Everything but water is added at home into a tupperware container.  At work, I boil some water and add that - you sort of have to play around with how much water you need - put the cover back on, wait, and enjoy.  You're not supposed to cook flax oil, but is this really cooking? I ... just don't want to bring that to work separately.  Lazy.
  • And by "Tupperware" TM, I mean those square ones from Ikea with the blue lid.  You know which ones.
If you're having trouble getting your ass into gear for breakfast in the morning, give this a try.  It takes mere minutes to make at home (as in, to get everything that needs to be in the tupperware into the tupperware), and makes up so nice once you get to work.  And your office smells like cinnamon!  And if you have to make two breakfasts, it takes almost exactly no extra time to make a second container.  Ah, and it is *filling.*  Bon appetit, friends.

I'm glad you are loving it like I do! I must be going on about two months eating this almost every single morning. Neither I or Pat have yet to get sick of it!

Hm. Since I now walk 35 minutes to work every morning and never eat breakfast, I'm STARVING by the time I get there. I will definitely give this a shot. I like oatmeal, but never seem to eat it.

I suppose that you could bring enough for a week on a Monday rather than bringing some every day? Though the oil might make it a bit gross by friday.

Haha, it might, and your apples would be pretty brown from being cut for a week. In all it takes me less than five minutes to assemble at the house. You could probably (if you have enough tupperware) make a few up at a time on the weekend, and keep it in the fridge or something (maybe add the syrup and oil before you leave).

Oh, and your container might get a bit grody with dried oatmeal :)

Mmm that does sound good, especially since I've been so bad at making a weekly batch of muffins for breakfasts. We'll load up on supplies and give it a try.

There's nothing like a good morning shovel to work up an appetite.

This would be most suitable for a stick-to-your-ribs type breakfast after shoveling the walk. And do you have a favourite muffin recipe that you make? I love muffins but never make them, and when I do they're some disgraceful item out of a mix from the grocery store.

My sneaky oatmeal method: toss rolled oats in a bowl, cover with water and leave in the fridge overnight. Nuke in the morning for 2 minutes. Makes a speedy but creamy breakfast porridge. Sometime I'll use half steelcut oats if I want something chewier, plus raisins and honey for tastiness.

That sounds delicious, Paige.
